I'm not a chef, let's make that clear! But since I had the most perfect carrot cake on a holiday trip in England many years ago (I wasn't a vegan back then), I wanted to make a vegan version of it. And tadaa...! After a little refining, here's my recipe for a moist carrot cake with looots of carrot and a fresh lemon topping. Sara made it one day with walnuts instead of pecans and that was great too. I think any type of nut will do. Sooo... enjoy!

Ingredients
Carrot cake base
• 600 g/21.6 oz carrots
• 260 g/2 cups normal flour, non self-rising
• 150 g/1 cup unsalted pecans, chopped
• 200 g/1 cup white or cane sugar
• 250 ml/1 cup ml vegetable oil
• 8 tbsp corn starch
• 1 + ½ tbsp vanilla extract
• 2 tbsp baking soda
• 2 tbsp baking powder
• 3 tsp cinnamon powder
• a pinch of salt
Lemon topping
• 30 ml/⅛ plantbased milk, I used oat milk
• 140 g/⅔ cup powdered sugar
• 20 g/1 + ½ tbsp plantbased butter • 1-2 tbsp lemon juice, depends on how strong you want the lemon taste
Other
• Springform tin with a diameter of 28cm / 24cm
Instructions
1. Grate the carrots. This can be done with a handgrater or a food processor.
2. Mix the corn starch, oil, sugar and vanilla extract. Then add the flour, baking soda, baking powder, cinnamon powder and salt. Mix well.
3. Take a springform tin with a diameter of circa 28 cm. 24cm will also do. Line the cake tin with baking paper or grease it.
4. Heat up to oven to 175°C / 352° F. 5. Chop the pecans. Stir the pecans and the carrots into the dough and put it in the springform tin.
6. Bake for +/- 50 minutes in the middle of the oven. Keep in mind that the baking time depends on your oven and can vary. if you pierce the cake with a skewer and the skewer comes out clean, it's ready!
7. For the topping: first mix the sugar, butter and half of the milk in a bowl. Add the rest of the milk slowly and add the lemon juice. Let the mixture rest in the fridge, don't put it immediately on the hot cake.
8. Put the topping on the cake with a spatula and decorate with some whole pecans on top of it.
